One Skillet Sausage and Veggie Stir Fry
• 1 lb Italian Sausage (Links), cooked and cut into 1/4 size discs
• 1 pepper (yellow, red. orange or some of each)
• 1-8 oz package fresh mushrooms (your choice), sliced
• 1 small vidalia onion. sliced
• 1 clove fresh diced garlic
• approx 1 lb of fresh asparagus (bottom of stems removed)
• Coconut oil or Epic pork lard (just enough to coat bottom of skillet
In a large skillet on medium heat, add your coconut oil/ pork lard until heated. This doesn't take long.
Add all of the ingredients to the skillet except for the sausage and garlic. Saute' about 2 mins or until crisp tender, then add garlic and sausage until sausage is heated thoroughly, about a minute or so.
Plate and Serve
Makes 4 servings unless you are my family, then it is gobbled up in one setting :)
Note: for this to be Keto acceptable, please make sure your sausage is sugar free or you could just replace with ground pork, beef, chicken, deer, etc.
